Steps

  1. Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

  1. Get your smoker fired up to a temp of around 225F
  2. Add shredded cheese, ground beef and seasoning in a bowl and mix well
  3. Place mixture in a freezer bag and cut a hole at one corner
  4. Squeeze mixture into each manicotti using your fingers to stuff it fully
  5. Wrap it in bacon, if bacon isn’t long enough wrap with 2 pieces 
  6. Place any smoking wood chips or chunks on hot coals then place shotgun shells into smoker indirectly. 
  7. Smoke for 2 hrs.
  8. After 2 hrs baste with your favorite BBQ sauce on both sides then smoke for another 10 mins
