- Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

- Get your smoker fired up to a temp of around 225F
- Add shredded cheese, ground beef and seasoning in a bowl and mix well
- Place mixture in a freezer bag and cut a hole at one corner
- Squeeze mixture into each manicotti using your fingers to stuff it fully
- Wrap it in bacon, if bacon isn’t long enough wrap with 2 pieces
- Place any smoking wood chips or chunks on hot coals then place shotgun shells into smoker indirectly.
- Smoke for 2 hrs.
- After 2 hrs baste with your favorite BBQ sauce on both sides then smoke for another 10 mins
