Steps

  1. Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

  1. Season you skirt steak with your seasoning of choice, we used Zavala's fajita seasoning
  2. Sear the steak 2-3 minutes on each side until a nice char develops. 
  3. While the steak rests for 5 minutes, heat up your corn tortillas. Pro tip, lightly coat the tortillas with oil before heating on the grill. 
  4. Slice the skirt steak across the grain into strips and diced into cubes after. 
  5. Serve on a tortilla with diced onion, cilantro and fresh lime juice and your favorite hot sauce. Enjoy!
