- Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

- Season you skirt steak with your seasoning of choice, we used Zavala's fajita seasoning.
- Sear the steak 2-3 minutes on each side until a nice char develops.
- While the steak rests for 5 minutes, heat up your corn tortillas. Pro tip, lightly coat the tortillas with oil before heating on the grill.
- Slice the skirt steak across the grain into strips and diced into cubes after.
- Serve on a tortilla with diced onion, cilantro and fresh lime juice and your favorite hot sauce. Enjoy!
