- Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

- In this recipe, we'll be utilizing leftover smoked beef belly from a precious cook. Full recipe can be found here.
- In a large pot, heat up 2 quarts of beef broth and bring to a light boil.
- Once the broth is ready, add your noodles to the pot. Season to taste at this point.
- Add your favorite curry sauce. We used Khoi Curry No.1.
- Let the sauce marinate with the noodles and broth for about 10 mins.
- In a bowl, add your noodles, broth, beef belly, boiled egg, and cilantro to garnish.
- Boom! All done.
