Steps

  1. Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

  1. Pre soak wood skewers for 1 hour prior to cook
  2. Boil potatoes until fork tender about 10-15min
  3. Fire up smoker to 225F using hickory wood
  4. Cut up tri-tip into 1 in cubes against the grain
  5. Add tri-tip, mushrooms and potatoes to skewers in whatever order you prefer
  6. Drizzle olive oil as a binder then season with salt pepper garlic
  7. Smoke indirect for 20 min
  8. After 20 min get grill set up in grill mode. 
  9. Mix melted butter, garlic, thyme, rosemary and pepper in a bowl
  10. Place skewers onto grill over the coals and bastes with garlic herb butter
  11. Flipping every min and basting
  12. When tri-tip pieces reach an internal temp of 135 remove and let cool. Topping with leftover garlic and herb butter
