- Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

- Pre soak wood skewers for 1 hour prior to cook
- Boil potatoes until fork tender about 10-15min
- Fire up smoker to 225F using hickory wood
- Cut up tri-tip into 1 in cubes against the grain
- Add tri-tip, mushrooms and potatoes to skewers in whatever order you prefer
- Drizzle olive oil as a binder then season with salt pepper garlic
- Smoke indirect for 20 min
- After 20 min get grill set up in grill mode.
- Mix melted butter, garlic, thyme, rosemary and pepper in a bowl
- Place skewers onto grill over the coals and bastes with garlic herb butter
- Flipping every min and basting
- When tri-tip pieces reach an internal temp of 135 remove and let cool. Topping with leftover garlic and herb butter
