Steps

  1. Get your charcoal started ahead of time. This will take the full 30 min to light so you’ll want to make sure you account for this.

  1. Place coals near the bottom right vent side and add smoking wood 
  2. Apply a light layer of olive oil and season the salmon with the cajun rub 
  3. Smoke the salmon for 25 min or until golden brown with an internal temp of 130 degrees. 
  4. On a tostada, add sliced avocado, a piece of smoked salmon, fresh pico de gallo and top with a squeeze of fresh lime juice. For the spicy folks, add your favorite hot sauce as well. 
  5. Enjoy and repeat!
